Vegetable soup.

“Hey, what do you want to eat tonight?” “Vegetable soup.” What do you want in it?” “I don’t know, anything interesting.”

Ingredients:
🥦 1 carrot, diced
🥦 1 brokoli, cut in pieces
🥦 12 cm leek, cut in 0.7 cm pieces
🥦 2 green onion, sliced
🥦 1 red onion, sliced
🥦 5 cloves garlic, grated
🥦 6 long broad beans, cut in 1 cm pcs
🥦 1 cup frozen peas + carrot
🥦 4 sticks fresh parsley, sliced
🥦 Olive oil and/or butter
🥦 Salt, pepper, chicken/vegetable stock to taste

1. In a pot, stir fry red onion until translucent.
2. Add garlic, salt and pepper and stir fry until fragrant.
3. Add hot water (and stock if you prefer) and diced carrots, simmer until carrots are half cooked.
4. Add the beans and simmer until the beans are half cooked.
5. Add the brokoli and leek and simmer for approximately 7 minutes.
6. Add green onion, and frozen peas + carrot, fresh parsley and green onion and simmer for another minute or two.
7. Serve warm
