Until yesterday I was not aware that today is pancake day!!

So, this morning I jumped into the kitchen and make classic lemon and buttermilk pancakes! Classic, easy to make, delicious, and everybody loves them!

For the recipe:

Combine 1 cup of milk with the juice of half a lemon and set aside for 5 minutes. To that, we add 1 tbsp of sugar, 1 egg, and the zest of one lemon, mix all until well combined. Slowly incorporate 1 cup of self-rising flour, and that’s all you have the batter.

Cook in a pan over medium to low heat, until bubbles explode. Nearly one min or less on each side.

Note: This recipe serves about six pancakes.
