This is a perfect prep meal idea. It came to me by planning my week menu only with what I had in my pantry.
Like most of you, I’m doing home office, that said expending hours in the kitchen cooking lunch is not an option. I wanted to prepare something that will be delicious, versatile, and will not take most of my lunch break.
That’s how this 3 beans casserole came to mind. I ate in three ways, by itself, in lettuce tacos, and I also filled some bell peppers with it.
This is how I did it:
First, pre-heat the oven at 180°C.
In a casserole, add onions, tomatoes, garlic, and aromatics, cook for 5 minutes in the oven. Now, let’s start adding the beans, use one can of each bean, black, kidney, and white beans. Add a cup of sweet corn and one cup of quinoa with two cups of vegetable broth. Cook for 45 minutes, and that’s all. I topped mine with feta cheese and fresh coriander.
