This basil pesto is made with simple ingredients and is quick and easy. In this opportunity, I made it vegan, but you can easily substitute the nutritional yeast for parmesan cheese. This recipe uses fresh basil and a great mix of walnut, almonds, and cashews, feel free to use whatever nuts you have in hand.

It is perfect for pasta, salads, sandwiches, or anywhere a lemon pepper bite would be cherished. On this occasion, I used mine for a babka.

Ingredients
4 packed cups fresh basil
2 cloves Garlic
2 tbsp Lemon juice
1 pinch salt
1/2 cup mix nuts
1/2 cup nutritional yeast

Directions:
Start chopping the garlic along with some of the basil leaves. Add the rest of the basil and cut it. At this point, the ingredients should be very fine mince. Add half of the nuts and chop, add the rest of the nuts, chop more. Add the nutritional yeast.

In the end, you want a chop so thin that you can press all the ingredients into a basil cake.

Transfer it to a small bowl, cover it with the lemon juice now you can set the pesto aside, or place it in the refrigerator until you are ready to use it. Just before serving, give the pesto a quick stir to incorporate all the ingredients. For a much simpler version, you can throw all the ingredients in the blender, but the texture will not be the same.
