The traditional Sicilian Caponata is an explosion of Mediterranean flavors that combines the best Sicily. The authentic Caponata has eggplant, celery, tomato, onion, and green olives. What defines the Sicilian Caponata is the bittersweet provided by vinegar and sugar.

-Recipe:
3 eggplants
extra virgin olive oil
1 red onion
80g tbs tomato paste
60g green olives
4 tbsp vinegar
2 tbsp sugar
2 celery sticks with the leaves
Directions:
Wash all the vegetables and dry them. Cut the eggplants into cubes and put them in a colander after seasoning them with a handful of salt. Let eggplants rest for about 30-50 minutes, so they lose part of their liquids. Cut the rest of the vegetables into small pieces and finely chop the onion.
In a big pot over medium heat, fry the onion for about 7 min. Once onions are cook, add the celery and cook for another 3 min, finally add tomato paste and olive and cook for 7 min, stirring occasionally. Set aside.
Slightly drain the eggplants and fry them. Incorporate the eggplants into the rest of the vegetables, add salt, vinegar, sugar, and basil. Mix everything well and cook for 10 more minutes. Let Caponata cool down and serve with pieces of toasted bread.
