The thing with galette is that you can do them with any flavor you like. This time, I prepared a Rustic Tomato, Eggplant & shallot for a quick Monday lunch.⁠

Recipe⁠
Ingredients:⁠
1 sheet pie dough⁠
4 large tomatoes⁠
1 eggplant⁠
2 shallots⁠
60g Feta cheese⁠
Fresh basil⁠
Fresh thyme⁠
Flaky sea salt⁠
Freshly ground pepper⁠
1tsp Olive oil⁠

Method:⁠
1. Preheat the oven to 200 ° C.⁠
2. Cut the eggplants, and cook them until golden brown in the pan. ⁠
3. Chop the shallots into thin strips.⁠
4. On a lightly floured surface, roll the pastry out into a circle about 1cm thick. Place the pastry on a parchment-lined baking sheet and arrange the chopped shallots, crumbled feta cheese, and herbs over the pastry, leaving a 1 cm border.⁠
5. Cut the tomatoes into thin slices.⁠
6. Place tomatoes & eggplants over the feta cheese and herbs.⁠
7. Carefully fold edges up and slightly over the tomatoes.⁠
8. Add more herbs and olive oil.⁠
9. Transfer to the oven and bake for 30-35 min or until golden brown. It is ok if the edges get dark.⁠
