Tamatar Baigan – Was one of the first Indian dishes I learned to cook and I simply like it too much. It is eggplants in tomato sauce, impregnated in full Indian cuisine flavors, like turmeric, coriander, and cumin seeds, and very spicy!
I got the recipe from the three sisters Indian cookbook – flavours and spices of India.

Tamatar Baigan: fue uno de los primeros platos indios que aprendí a cocinar y me encanta, las berenjeas estan en mi top 3 de vegetales favoritos, y eso es Tamatar Baigan, berenjenas en salsa de tomate, impregnadas de sabores de la cocina india, como cúrcuma, cilantro y semillas de comino, ¡y muy picante!
