Spicy tomato and red chili jam!
An easy and delicious experiment to try. It is great on toast, with some brie cheese, or as an appetizer for parties. Have you ever had spicy tomato jam?
400g tomatoes peeled and chopped
200g sugar of your choice. (I like to use brown sugar)
1 tbsp lemon juice
½ tsp salt
1 red chili
1 tsp red pepper flakes
Method:
Combine all ingredients in a Dutch oven or a deep saucepan. Place the peeled tomatoes, lemon juice, sugar, minced chili, salt, and red pepper flakes. Bring to boil over medium-high heat, stirring occasionally.
Once it is boiling, bring down the heat to a medium-low and cook for about 30 to 35 minutes.
You’ll know it’s done when you scrape a spoon across the bottom of the pot and no liquid fills in the path. Cool, then seal and refrigerate for up to 3 weeks.
