Soup of Everything
“What’s for dinner?” “Soup..” “What soup?” “Everything soup..”
🥘 2 large carrots, thinly chopped
🥘 1 broccoli head, chopped
🥘 2 medium sized leek, chopped
🥘 7 wide beans, chopped
🥘 2 green onion, chopped
🥘 1/2 paprika, chopped
🥘 1 onion, chopped
🥘 5 garlic cloves, grated
🥘 1/2 cup peas
🥘 5 stems parsley
🥘 Salt, pepper, cumin, Italian herbs, garlic powder
🥘 To serve: klobasa, cheese

1. Sauté the onion and paprika until fragrant, then add garlic, salt and pepper. I used a mix of olive oil and ghee to sauté.
2. Add carrots and beans, and sauté a bit more.
3. Add hot water and bring to a simmer for about 10 minutes or until carrots and beans are half cooked.
4. Add broccoli, leek, green onion and simmer for about 5 minutes.
5. Mix the ingredients using a hand mixer.
6. Add klobasa, Italian herbs (1/3 tsp), garlic powder (1 tsp), salt (1 tsp), pepper (2/3 tsp), cumin (1 tsp) and simmer for another 8 minutes (until klobasa is cooked)
Serve 😍
PS: all herb amounts I use is an approximation. I just added until the flavors make me happy. This dish serves many portions! The amount of water I add is as much as the pot allows.
