Smoked tofu skewers with balsamic sauce.
Cut the tofu into bite-size cubes, and season with the spices that you like, I went super basic with, garlic and ginger powder, salt & pepper. Assemble the skewers alternating tofu, cherry tomatoes, and red onions. Cook in the grill over medium-high heat.
In the meanwhile, combine soy sauce, maple syrup, mustard, thyme, black pepper, 2 Tbsp. Olive oil. Once the tofu is golden on both sides, reduce the heat to low, pour in the marinade, and cook 1 minute, stirring often until marinade begins to evaporate.
Serve with cucumber ribbons and fries.
