Smash crispy potatoes! This recipe is a keeper, so you might want to save it for later!

It goes with everything, but we love it as a side dish with baked fish. The quick of vinegar gives the perfect crispy texture, and they’re super soft inside.

I am not giving a full list of ingredients as measurement here didn’t make sense to me. Bake whatever amount of potatoes you want and use as many herbs as you please.

Preheat the oven to 190°C.

Boil the potatoes for about 10 min, in hot boiling salted water, drain them, and then a bit of toss in the colander will help fluff the edges a bit more. Now, transfer the potatoes to a roasting tray, cover with olive oil or butter (your choice). The key here is to roast them in a single layer so you may use more than one tray, give them a good seasoning with salt and pepper.

Cook for 30 min in the oven, until about lightly golden. After the time has passed, take them out and lightly smash the potatoes, and add the herbs of your choice, I love to use thyme, garlic, and bay. It is also time to add the key protagonist, the vinegar. Adding a splash of vinegar will give the potatoes an amazing extra crunch. I used balsamic vinegar.

Once you’ve done that, pop them back to the oven for 25 min. or until they look perfect to the eye.
