Roasted Tomato and Carrot Soup.

The soup I made here was quite thick. I liked it, but if you like it more water, add more water 🙂

Ingredients:
🥕 600 gr carrots, peeled and diced
🥕 1 large red onion, diced
🥕 5 cloves garlic, peeled
🥕 2 cans peeled tomatoes
🥕 1/2 cup Greek yogurt
🥕 2 tbsp olive oil
🥕 1 tsp salt
🥕 1 tsp ground cumin
🥕 1/4 tsp black pepper
🥕 1 tsp dried basil

1. Place carrots, onion and garlic in a large bowl and mix in olive oil, salt, cumin and pepper evenly.
2. Place in the oven (200C) for 20-30 minutes, turning twice throughout.
3. Place the canned tomato and the baked vegetables in a food processor and blend until smooth.
4. Place the mixture in a cooking pot and add all other ingredients. Simmer for appx 5-10 minutes, season to taste.
