A very rich and delicious breakfast! My partner ate his with grated horseradish and was extremely delighted. This egg contains sausage-like meat, spinach, mushroom, and cheese.
🍄 100 gr shiitake mushrooms
🍄 4 eggs
🍄 2 cups fresh spinach leaves
🍄 3 shallots, sliced
🍄 1 cup meat of choice, diced; mine is like sausage
🍄 Cheese, slices/grated
🍄 1 small onion, sliced
🍄 Oregano, Italian herbs, rosemary, salt, pepper to taste
1. In a pan, sauté shallots and onions until fragrant. Add the sliced shiitake mushrooms, salt, pepper, pinch of rosemary, and italian herbs and sauté until mushrooms are cooked. Add the spinach leaves and cook until wilted. Set aside
2. In a second pan, cook meat of choice in butter until cooked. Make sure that the meat is evenly distributed in the pan and add 4 eggs (don’t break the yolk yet). Season with oregano, salt and pepper, and place sliced/grated cheese on top. Then carefully break the yolk and swirl it a little with the egg-white. Close with lid and let cook for a while (make sure it doesn’t turn up too dry).
3. When the egg is cooked, place the mushroom and spinach mix on top of the egg.
4. Serve with warm toast.
