Quick lunch idea: vegan bowl with ginger tofu, carrot ribbons, broccoli, and jasmine rice.

Simple but full of colors and flavors! 🥦🥕🍚

You’ll need:

A block of tofu, previously pressed and cut into cubes.
1 tbsp ginger powder.
1 tbsp cornstarch.
Juice of half a lemon.
Salt & fresh ground pepper to taste.

In a large bowl, add the tofu cubes, and coat with corn scratch and ginger powder, salt, and pepper.

You have three options to cook the tofu, in the oven at 200°C., or in a non-stick pan with a bit of olive oil or the air-fryer. Your choice.

Once it’s cooked, add the lemon juice and serve with any veggie you like.
