Puff pastry galette with eggs for a different breakfast!
Three things I love, breakfast, puff pastry, and eggs!

Let’s start by preheating the oven at 220°C.
Roll out the puff pastry and divided it into six portions. With a sharp knife, trace a border of half a centimeter on each pastry portion. Be careful not to make a deep cut into the pastry. Pinch with a fork the inside part of each square. Bring them back to the fridge for about 3 min.

Beat one egg with a splash of water; set aside. Spread some cheddar cheese and bell peppers finely cut inside the lines of each pastry square. Brush the borders with the egg wash.
Bake in the oven for 12 to 15 minutes. Remove from the oven, crack one egg into each of the squares, add seasoning and bake again for 8 to 10 minutes.
