Orange Pound Cake it’s inspired by my grandma’s fruity cake.
It is full of lots of citrus flavors, from the bright, floral orange zest! Perfect for a weekend baking project.

The cake AROMA is out of this world. I went extra creative and added ground cardamom for an extra kick of spiciness. Garnish with fresh orange slices and icing sugar.

Ingredients:

3 eggs
250g sugar
275g all-purpose flour
8g baking powder
100g butter, melted
110g plain Greek yogurt
1 large organic orange, washed and cut into pieces (with the rind, but remove the seeds)

Method:
Preheat oven to 175°C

Prepare a 23 x 6 cm (9 inches) springform pan.

Place the sugar and eggs in a large bowl and beat with an electric mixer until light and fluffy.

Combine the flour with the baking powder, and the cardamom, then add it to the mixture a little at a time along with the melted butter. Continue to mix until blended, then stir in the yogurt.

In a food processor or blender, process the whole orange until it is almost pureed. Add to cake mixture and stir until evenly combined, then put the batter into the prepared baking pan.

Bake the cake for about 50-60 minutes. Allow to cool for about 30 minutes, then remove the side of the springform pan.

Once the cake has completely cooled down, you can decorate it with icing sugar and orange slices.
