Mutton curry with salad and roti canai

Ingredients:
๐ 300 gr mutton, diced
๐ 1/2 butternut squash, grated
๐ 1 onion, grated
๐ 1.5 inch ginger, grated
๐ 1.5 cup canned tomatoes
๐ 1 cup coconut milk
๐ 2 tsp curry powder
๐ 1.5 tsp garam masala
๐ Pinch cumin powder
๐ Pinch paprika powder
๐ 1/2 cup frozen spinach
๐ 1/3 cup of frozen peas + carrot
๐ Salt, pepper, chili flakes
๐ Oil
1. Saute butternut squash, salt, curry powder, garam masala in a pan until dry-ish (5 mns).
2. Add grated onion, cook for 2-3 minutes.
3. Add grated ginger, cook.
4. Add mutton and toss until half cooked.
5. Add canned tomato and coconut milk (optional: broth block).
6. Add a pinch of cumin, chili flakes, paprika powder, pepper, salt, cook and toss until mutton is done. Mix in frozen vegetables and stir.
7. Adjust flavor and serve with roti canai and salad
