Ingredients:
๐Ÿ› 300 gr mutton, diced
๐Ÿ› 1/2 butternut squash, grated
๐Ÿ› 1 onion, grated
๐Ÿ› 1.5 inch ginger, grated
๐Ÿ› 1.5 cup canned tomatoes
๐Ÿ› 1 cup coconut milk
๐Ÿ› 2 tsp curry powder
๐Ÿ› 1.5 tsp garam masala
๐Ÿ› Pinch cumin powder
๐Ÿ› Pinch paprika powder
๐Ÿ› 1/2 cup frozen spinach
๐Ÿ› 1/3 cup of frozen peas + carrot
๐Ÿ› Salt, pepper, chili flakes
๐Ÿ› Oil

1. Saute butternut squash, salt, curry powder, garam masala in a pan until dry-ish (5 mns).
2. Add grated onion, cook for 2-3 minutes.
3. Add grated ginger, cook.
4. Add mutton and toss until half cooked.
5. Add canned tomato and coconut milk (optional: broth block).
6. Add a pinch of cumin, chili flakes, paprika powder, pepper, salt, cook and toss until mutton is done. Mix in frozen vegetables and stir.
7. Adjust flavor and serve with roti canai and salad
