I wanted to make a thick mushroom sauce for a dip. However apparently I didn’t buy enough potatoes for it, so I decided to call this mushroom soup. Surprisingly, it was awesome!
🍄 500 gr mushrooms, diced
🍄 150 gr fresh spinach
🍄 2 small potato, cooked and mashed
🍄 1 can coconut milk (500 ml)
🍄 1 tbsp butter
🍄 1 tbsp olive oil
🍄 salt, pepper, Italian herbs to taste
1. Sauté mushrooms with butter and olive oil until cooked. Add salt and pepper. As necessary.
2. Make sure the water from mushrooms have evaporated.
3. Add the coconut milk and bring to simmer. Add the mashed potato and stir.
4. Add the spinach and cook until the wanted consistency.
5. Serve warm.
PS: I added about 2-3 tbsp curry to the simmering soup and got curry mushroom soup!!
