Mung Bean Porridge in Coconut Milk

Perfect to keep you warm on a cold rainy day.

Ingredients:
🥥 1 cup mung beans
🥥 1 pandan/screwpine leaf
🥥 7 cm ginger root
🥥 1 cm cinnamon stick
🥥 50 gr palm sugar
🥥 65 ml coconut milk
🥥 Water
1. Clean the mung beans in running water and soak for 1 hour
2. Bring 1/2 pot of water to boil and add the crushed/sliced ginger root, cinnamon stick, and pandan leaf
3. Add mung beans and boil until soft
4. Add palm sugar to taste
5. Add coconut milk
6. Serve hot
PS: if too thick, add more water!
