Moroccan style salad?

PS: cauliflower fried “rice” is my new favorite.
🥗 Salad: leaves, red cabbage and beetroot tossed in olive oil + pepper
🍚 Cauliflower rice:
– Grate 1 cauliflower and press the liquid out.
– Saute in a pan with: 1.5 tbsp butter, cumin, curry powder, mixed herbs, paprika powder, garlic powder, salt, pepper.
– When somewhat fried, scramble in 3 eggs pre-seasoned with salty soya sauce, paprika powder, pepper, salt, grated cheese.
– Add frozen vegetables (peas and carrot) + Parma ham and allow to heat up.
🌾 Chickpeas: cook as mentioned in package (mine was soak for 8 hours in water then boil for 1 hour). Allow to dry then toss in olive oil + paprika powder + garlic powder + salt + pepper + cumin. Bake at 200C for 20-30 minutes or until crispy.
