Moroccan-style lentils

This turned out amazingly good! I was quite sceptical because most ingredients (read: paprika) were (was) raw… but would totally make again! What could also be added: 1 tsp ginger or fresh ginger (I didn’t have any) and something spicy if you like spicy. For this recipe I used a mix of black and red lentils.

Ingredients:
🥣 1 cup lentils (yields 2 cups after overnight soaking)
🌶️ 3-4 cloves garlic, peeled
🌶️ 1/2 medium onion. I saute’d the other half!
🌶️ 1 large paprika
🌶️ 2 tbsp tomato sauce
🌶️ 1.5 tbsp lemon juice
🌶️ 1 tbsp sugar
🌶️ 1/2 tsp sea salt
🌶️ 1/2 tsp pepper
🌶️ 1 tsp ground cumin
🌶️ 1/2 tsp ground coriander
🌶️ 1/2 tsp ground kurkuma
🌶️ 1/2 tsp chilli powder
🍀1/2 cup fresh chopped parsley/ciliantro

1. Cook lentils until tender
2. Add all 🌶️ ingredients in a mixer. It may be a bit spicy from the paprika but the spiciness will reduce once it’s combined with the lentils.
3. Drain the liquid from the lentils and the spice mixture + parsley/cilantro into the pot. Mix evenly.
4. We enjoyed this amazing dish with rice and saute onion (from the leftover 1/2 onion).
