Meatball + Veggie in Tomato sauce
I didn’t have much time to cook but I wanted something more than just meatballs in tomato sauce, so here goes.
🥒 2 medium sized zucchini
🥒 1/2 broccoli head, cut very small
🥒 1 tomato, sliced
🥒 2 cups fresh spinach
🥒 2 meatball in tomato sauce
🥒 salt and pepper as needed
1. I used this sharpener-like device to make strands of zucchini.
2. Add olive oil to a pan and add the zucchini and broccoli. Close with lid and let cook. Add the spinach some time later.
3. When cooked, add the meatballs and sauce and cook a while longer.
