Kolak pisang dan ubi
What better than some Indonesian sweet dessert ❤️
🍌 1 large ripe plantain
🍌 2 cups coconut milk
🍌 2 cups water
🍌 1/2 block brown sugar
🍌 2 sweet potatoes
🍌 3 pandan leaves
🍌 pinch of salt
1. Peel and dice sweet potatoes and bananas, appx 1.5 cm thick.
2. Boil sweet potatoes in 2-3 cups of water. When tender, remove and pour cold water to stop the cooking.
3. Add the coconut milk and pandan leaves to the water and bring to a boil. Don’t stop stirring. Add the sugar and a pinch of salt.
4. Bring the mixture to a simmer and add the plantain. When the plantain softens, add the sweet potatoes and turn off the heat.
5. Serve warm
