Keto cinnamon roll
I substituted 1 tbsp granulated sweetener with 1 tbsp coconut sugar because.. well.. it just seems right 🙂

🥜 175 g shredded (dry) mozzarella
🥜 80 g almond flour (extra fine)
🥜 2 tbsp cream cheese
🥜 1 egg room temperature
🥜 1 tsp vanilla extract
🥜 1/2 tsp baking powder
Filling: melt butter and add sugar & cinnamon, set aside.
🫔 2 tbsp butter (or water)
🫔 1 tbsp granulated sweetener
🫔 1 tbsp coconut sugar
🫔 1 tbsp cinnamon
1. Pre-heat oven to 180 C.
2. Melt mozzarella & cream cheese (non-stick pan, low heat) (see image). Remove from heat. Cheese should be melted but not bubbling.
3. Stir in 1 egg.
4. Add almond flour & baking powder, combine with hand. Divide dough into 6 balls (50-55 g each).
5. Oil hands & roll dough into a long sausage (30-40 cm), then flatten (hitting gently with fingers is easier. Make it as thin as possible. Spread the cinnamon filling & roll into a bun. Cut each bun in half. This recipe makes 12 buns.
6. Place buns on parchment paper and bake for 20 minutes. Top with chocolate drizzle/cream cheese.
Always serve warm.
