Cook the tofu on a skillet over medium-high, on both sides. In the meanwhile, combine soy sauce, maple syrup, garlic, mustard, thyme, black pepper, an olive oil. Once the tofu is golden on both sides, reduce the heat to low, pour in the marinade, and cook 1 minute, stirring often until marinade begins to evaporate. Stir in roasted pepper, broccoli, and mushrooms.

Serve over rice or grain of choice.

Balsamic Tofu (20 Minutes)
