Lately I’ve been buying a whole chicken because, as pointed out by a friend, it’s cheaper and nothing really goes to waste.
After removing the meaty parts (to be cleaned and frozen), the bones and excess skin and fat can be boiled with any vegetable you have at home (here I used parsley, leftover cucumber, leftover zucchini, broccoli stem, spring onion, garlic cloves, crushed pepper and salt.
Allow to simmer on low heat for a few hours (until vegetables chicken bones are soft and the soup tastes good.
Broth can be used for soup.
