Eggs in purgatory are very similar to Shakshuka but has more of a Mediterranean vibes.

Eggs in purgatory, are rich in flavor, loaded with tomato sauce, garlic and red pepper.

I love to do them during the weekend and eat them with some toast or garlic bread!

4 eggs
3 garlic cloves, minced
1 tbsp olive oil
1 red pepper thinly sliced
3 tomatoes chopped
Salt & fresh ground pepper
Handful basil leaves

Heat oil in a medium skillet over medium-high. When it just starts to shimmer, add garlic and season generously with salt and black pepper. When garlic is fragrant add in red pepper, then add tomatoes and cook, tossing occasionally, until tomatoes look plumped and some of the skins start to split, about 3 minutes. Reduce heat to medium, cover pan and cook, stirring tomatoes.
Every couple of minutes, lightly smashing them so they release the juice. Carefully crash eggs into the pan, making space in the sauce for them. Cover and let them cook for about 4 to 6 minutes. Or until whites are set and yolk are still runny.
