Easy couscous and lentils stuffed peppers with mash avocado is a delicious and perfect meatless main dish for the week.

🌶️The first thing we need to do is to cook the couscous:
Combine 1 cup couscous, 2 cups vegetable broth, and spices you like in a small saucepan. Bring mixture to boil, reduce heat, cover, and simmer until couscous is fluffy ca. 12 to 15 minutes. Set aside.

🌶️The second step is to cook the lentils:
I cooked mine with 1 onion, 2 garlic cloves, 20 gr of fennel, and a tsp coriander seeds. Cook until soft and tender, and there’s no liquid in the pan.

🌶️Now let’s bake the bell peppers and mix the filling:
While the couscous and the lentils cooks, prepare the bell peppers, I used 2. Arrange the bell peppers cut side up in a baking dish with a little olive oil at the bottom, bake at 220°C for about 20 minutes.
To the bowl with the couscous, add the lentils, combine well and adjust seasoning if necessary.

🌶️The fourth step will be to stuff the bell peppers: divide the filling evenly into each bell pepper half. Cover the pan with foil, and place back in the oven for 15 to 20 minutes. Lastly, garnish with your toppings of choice.
