East Java Meat Soup (Rawon)
This is a dish from East Java, Indonesia. It is one of my favorite dishes. Unfortunately “kluwek” (a main ingredient that gives the dark color) is hard to find abroad and the ones we found had an off flavor. Therefore I opted on using a pre-made mixture. Personally I think this brand has the best flavor.
🥣 250 gr beef
🥣 3 cm galangal (lengkuas)
🥣 1 stem lemongrass 🥣 2 bay leaves (daun salam)
🥣 2 lime leaves (daun jeruk)
🥣 1/2 sachet bamboe rawon instant spices
🥣 1 shallot, sliced
1. Boil beef until half done then cut into cubes
2. Allow 400 ml of broth to remain in the pot and add sliced galangal, lemongrass, bay leaves, lime leaves, shallot, and 1/2 sachet bamboe rawon instant spices
3. Cook on low heat until meat is tender
4. Serve hot with beansprouts and rice
Bamboe rawon instant spices contains: shallots, salt, vegetable oil, kluwek, galangal, lemongrass, garlic, turmeric, coriander, chili.
