Do you have a top 5 favorite foods?

Mine couldn’t be more simple:

These black beans are made from scratch in the pressure cooker and are vegetarian (because I love to sprinkle a bit of cheese on top). I love to eat beans with rice and fried plantains, or with over a tortilla.

Here’s how I do them:
First, we leave the beans in water overnight. The next day, we drain and cook in the pressure cooker according to the instructions of the one you have. It takes me 15 min. Once they are cook, we turn off and wait for the steam to go away. Meanwhile, we make a sauce with onion, garlic, chili, and paprika.

For the sautée veggies:
Heat a tablespoon of olive oil over medium heat and fry the onion until transparent. Add the garlic and sauté for 1 min. Now add the minced pepper and chili, and cook until soft. We add the species that we like the most, in my case, smoked paprika, cumin, ground coriander, salt, and pepper. Add the beans and cook until the consistency goes from soup to stew.

Note: if you don’t have a pressure cooker or don’t have time, do the veggies sautée part and add a can of drain and rinse black beans.
Another thing, Salt makes the beans harder, so do not add it while cooking them.
