Do you guys love puff pastry? Because I DO! like a lot! Always try to have some packages in my fridge for a just in case emergency (doing a galette). ⁠

The story behind this cinnamon sugar palmier is that I grew up eating them. It was my favorite thing to get when going to the bakery with my dad to buy bread! I love how crunchy they are, and with all that caramelized sugar, that makes them so delicious. ⁠

So, this is how I do them with a minimum complication:⁠
First thing, pre-heat the oven at 220°C.⁠

Roll out a puff pastry sheet, spread evenly 1/2 cup of sugar and 2 tbsp of cinnamon; please be intuitive here! Add more if you fancy more cinnamon taste. You can help yourself with a rolling pin to settle the sugar/cinnamon evenly into the sheet.⁠

Now let’s fold the sides of the sheet, towards the center, so they go halfway to the middle. Fold them again, so the two folds meet exactly at the middle of the dough. Then fold one last time, folding one half over the other. Then slice the dough into ca. 1cm and place the sliced side up on a prepared baking sheet. Sprinkle some more sugar on top (optional, but highly recommended)⁠

Bake for 6 minutes until golden brown and caramelized, then turn them carefully with a spatula, and bake for another 6 minutes. Transfer to a cooling rack and enjoy!⁠
