Cooking for friends makes me so happy!!. Yesterday my good friend sediga1 invited me for cooking together, it was so much fun and we had a super delicious meal. He cooked a quinoa salad with celery and avocado, and I cooked mushroom polenta and my first apple galette of the season.

Here’s the recipe for the polenta:

1 cup polenta flour
4 cup veggie broth
1 tbsp butter
Salt & ground pepper to taste.
For the mushrooms:

300g bottom mushroom
150g king oyster mushroom
2 tbsp olive oil
Salt & pepper to taste.

Add the broth to a saucepan, bring to a boil.
Slowly add in the Polenta in a steady stream. Stir continuously for 1 minute. Turn off the heat to low, cover with a lid and let it simmer for about 20 min, stirring every 3 minutes to prevent it from sticking to the pan.
Add the butter and let it cook for another 5 min.
Meanwhile, cook your mushrooms. In a medium-low heat no sticky pan with the olive oil, cook without moving for about 3 minutes or until golden brown and then turn them, now you can season it.

To serve

Top the Polenta with the mushrooms, sprinkle with coriander, and a drizzle of extra virgin olive oil.
