Cooked VS Raw
Out of vegetable ideas? Here’s a quicky: zucchini cooked with eggs (a famous dish in Cyprus) and raw tomato – cucumber – feta.
Zucchini cooked with eggs:
1. Slice zucchini and stirfry in a pan with a generous amount of olive oil until cooked. Add salt, pepper, and a lot of mixed herbs
2. Add 2 eggs and scramble
3. Serve hot
1. In a pot combine sliced tomatoes, cucumber, and feta cheese
2. Serve with olive oil and some pepper
