Chickpeas burger with tahini turmeric sauce.⁠
Serves 2⁠

FOR THE BURGERS:⁠
• 2 cloves garlic, minced.⁠
• zest from 1/2 lemon⁠
• 1 teaspoon salt⁠
• 1 teaspoon red pepper flakes⁠
• 1 tablespoon ground flax seeds⁠
• 1/4 cup cornflour⁠
• 1 can chickpeas, drained and rinsed⁠
• 1/4 cup coriander⁠
• oil for cooking.⁠

DIRECTIONS:⁠
In a bowl add, minced garlic, lemon zest, salt, and red pepper flakes. Add the beans, flax, and cornflour, with a hand blender, pulse a few times until you have a chunky puree. Add the parsley and pulse a few more times. Shape the mixture into patties about 1/2 inch thick and coat them lightly in more cornflour. Heat some oil in a skillet over medium-high heat. Cook the burgers until golden brown on both sides.⁠

FOR THE SAUCE:⁠
• 4 Tbsp tahini ⁠
• juice from 1/2 lemon⁠
• 1 Tbsp extra virgin olive oil ⁠
• 1 clove of garlic, minced⁠
• 1/4 teaspoon turmeric ⁠
• 4 Tbsp filtered water ⁠
• sea salt & pepper to taste ⁠

DIRECTIONS:⁠
Add tahini, lemon juice, olive oil, garlic, and, turmeric, into a bowl. Whisk and add in water until you achieve your desired consistency. Season with salt and pepper. ⁠

I served mine, with lettuce, tomatoes, and cucumber ribbons.⁠
