Chickpeas burger with tahini turmeric sauce.
Serves 2
FOR THE BURGERS:
• 2 cloves garlic, minced.
• zest from 1/2 lemon
• 1 teaspoon salt
• 1 teaspoon red pepper flakes
• 1 tablespoon ground flax seeds
• 1/4 cup cornflour
• 1 can chickpeas, drained and rinsed
• 1/4 cup coriander
• oil for cooking.
DIRECTIONS:
In a bowl add, minced garlic, lemon zest, salt, and red pepper flakes. Add the beans, flax, and cornflour, with a hand blender, pulse a few times until you have a chunky puree. Add the parsley and pulse a few more times. Shape the mixture into patties about 1/2 inch thick and coat them lightly in more cornflour. Heat some oil in a skillet over medium-high heat. Cook the burgers until golden brown on both sides.
FOR THE SAUCE:
• 4 Tbsp tahini
• juice from 1/2 lemon
• 1 Tbsp extra virgin olive oil
• 1 clove of garlic, minced
• 1/4 teaspoon turmeric
• 4 Tbsp filtered water
• sea salt & pepper to taste
DIRECTIONS:
Add tahini, lemon juice, olive oil, garlic, and, turmeric, into a bowl. Whisk and add in water until you achieve your desired consistency. Season with salt and pepper.
I served mine, with lettuce, tomatoes, and cucumber ribbons.
