I surprisingly ended up with ~800gr of chicken curry 🤣
Thankfully it tastes great!

Ingredients:
🍛 500 gr chicken breasts, diced
🍛 1/2 butternut squash, grated
🍛 1 onion, grated
🍛 1.5 inch ginger, grated
🍛 1.5 cup canned tomatoes
🍛 1 cup coconut milk
🍛 2 tsp curry powder
🍛 1.5 tsp garam masala
🍛 Pinch cumin powder
🍛 Pinch paprika powder
🍛 1/4 broth block
🍛 1/2 cup frozen spinach
🍛 1/3 cup of frozen peas + carrot
🍛 Salt, pepper, chili flakes
🍛 Oil

1. Saute butternut squash, salt, curry powder, garam masala in a pan until dry-ish (5 mns).
2. Add grated onion, cook for 2-3 minutes.
3. Add grated ginger, cook.
4. Add chicken and toss until half cooked.
5. Add canned tomato and coconut milk (optional: broth block).
6. Add a pinch of cumin, chili flakes, paprika powder, pepper, salt, cook and toss until chicken is done. Mix in frozen vegetables and stir.
7. Adjust flavor and serve with roti canai
