Champiñones al Ajillo or Garlic Mushrooms. A classic Spanish tapas.
These garlic mushrooms have become a signature dish that my friends love when I cook it for them. Sautéed mushrooms with garlic, olive oil, chopped parsley.
Garlic mushrooms are usually served with sourdough bread (toast in olive oil & thyme) and paired with cold beer or wine.
Ingredients:
30gr butter
20ml Olive Oil
450gr small button mushrooms
4 cloves of garlic, minced
2 tsp of fresh parsley leaves.
Salt & pepper to taste.
Method:
Over medium-high heat, melt the butter with olive oil.
Add the mushrooms and stir fry for around 4 minutes. Do not move them so they can get golden brown.
Add garlic, fresh parsley, salt, and pepper. Cook for another 3 minutes. And Enjoy!
