Cauliflower Sandwich

It turned out super amazing! Better than I expected.

Ingredients:
🥪 1 cauliflower head, cut into florets
🥪 2 eggs, lightly beaten
🥪 1/2 cup finely grated Parmesan
🥪 1/2 tsp oregano
🥪 Sliced cheese (I used Gouda)
🥪 Sliced ham
🥪 Salt and pepper
🥪 Olive oil or butter

1. Blend cauliflower florets in a food processor until texture resembles rice. If too wet, remove excess fluid by draining it with a piece of cloth.
2. In a bowl, combine cauliflower, eggs, Parmesan, oregano, salt, and pepper. Mix until evenly combined. This mixture yields 4 “slices of bread.”
3. Heat a large non-stick skillet over medium heat and add olive oil or butter. Take 1/4 part of the cauliflower mixture and shape into a square (like a bread). Even out on the pan and cook until golden (about 5 minutes). Flip and cook until other side is golden (about 3 minutes). Do the same for the other 3 “slices of bread.” Flipping it may be tricky as the dough can be fragile. I used a plate to flip it: move it carefully on a plate, flip on another plate, and place it back in the pan.
4. Top one cauliflower slice with cheese and ham and place the other slice on top. Cook until cheese is melted.
5. Serve with your favorite salad.
