Baked Ziti – The smell of pasta, tomato sauce, and cheese baking together is one of the most comforting scents to ever exist out there for me.⁠

Baked Ziti is a lot easier to do, throw together and serve than a lasagna. Perfect for the middle of the week dinner, we serve ours with a simple green salad.⁠

You’ll need:⁠

2 tbsp olive oil⁠

1 yellow onion, finely chopped⁠

4 garlic cloves, finely chopped⁠

1/2 tsp red pepper flakes⁠

5 cup marinara sauce⁠

1 tsp salt, plus more for seasoning⁠

fresh ground pepper to taste⁠

500g dried Ziti or penne⁠

200g ricotta cheese⁠

1/2 cup finely grated Parmesan cheese⁠

2 cups cheered mozzarella cheese.⁠

1. Preheat the oven at 180°C. Arrange a rack in the middle of the oven. Cook the pasta and sauce while the oven heating.⁠

2. Heat the oil in a large saucepot over medium heat, add onion, garlic, and pepper flakes, season it, and cook, until softened, not letting them burn.⁠ Add the marinara sauce, stir to combine, and bring to simmer. Rectify taste.⁠

3. When the water is boiling, heavily salt it, add the pasta, until al dente. (the pasta will continue cooking in the oven)⁠.⁠

4. Stir the ricotta, half of the Parmesan, and salt together in a small bowl; set aside.⁠

5. Drain the pasta, and return it to the pot, now coat it well with half of the marinara sauce. Rectify taste. Making sure the pasta is well-sauced, then fold in the ricotta.⁠

6. Start layering, transfer half of the pasta into a baking dish and spread into an even layer, then fold in the ricotta, layer half the mozzarella into the pasta. Repeat!⁠

7. Bake for about 30 minutes.⁠

Note: Make sure there is enough sauce to use as a layer at the top, under the mozzarella. It will protect the pasta and keep it from drying out.⁠
