Baked Lemon Chicken 💛

We could really taste the lemon, the chicken was really tender, and the vegetables were so good. Carrots were still a bit hard, though, but I don’t mind.

Ingredients:
🥕 2 carrots, sliced
🥕 2 small zucchini, sliced
🥕 1 eggplant, sliced
🥕 1 paprika, sliced
🥕 2 chicken thighs, a bit sliced
🥕 1/3 cup lemon juice
🥕 3 cloves garlic, crushed
🥕 1 tbsp honey
🥕 olive oil, salt, pepper

1. Coat chicken thigh with salt and pepper and panfry with olive oil until cooked.
2. In a bowl, add the lemon juice, 2 tbsp olive oil, honey, and the crushed garlic.
3. In a pyrex glass baking tray place the sliced carrots, zucchini, eggplant, paprika, and cherry tomatoes.
4. Place the chicken on top of the vegetables (see picture).
5. Pour the lemon juice mixture on the chicken and vegetables.
6. Bake at 200C for 15-20 minutes. Turn the fan on ♨

Mix the vegetables and enjoy warm.
