Assorted grilled vegetables.
Red beet, zucchini, paprika, broccoli, sweet potato.
1. Red beetroot: dice and steam with skin until soft. Remove the skin and place in baking tray.
2. Other vegetables: cut and place in baking tray.
3. Coat with olive oil and sprinkle salt, pepper, and herb of choice.
4. Bake at 200C for 15-20 minutes.
