Apple strudel with filo pastry

Ingredients – filling:
🍎 8 medium apples
🍎 8 tbsp salted butter
🍎 1.5 tbsp lemon juice
🍎 2 tbsp water
🍎 1 tsp vanilla extract
🍎 4 tbsp cornstarch
🍎 1/2 block brown sugar
🍎 2 tbsp stevia (sugar)
🍎 1.5 tbsp cinnamon powder

🧈 1 cup crushed almonds
🧈 2 tbsp melted butter
🧈 2 pinches salt
🧈 1 tsp cinnamon powder (or more)
🧈 1 tbsp stevia

1. Pie filling: do half and half if the pan is not big enough. Melt butter in a pan and remove from heat. Add all other ingredients and mix until well incorporated and starting to clump. Place the pan back on the heat and add the apple slices. Stir until tender but not too soft. Place in the fridge to cool.
2. Crumble: mix all 🧈
3. Assembly: in the bottom of a baking tray, place 10 layers of filo, each separated with some melted butter. Add 1 layer of apples. 2 – 4 layers of filo, and so on.
4. Place the crumble.
5. Bake at 180C for 20 minutes or until golden.
