Sopa de tomates asados:

Precalentamos el horno a 200 ° C.

En una bandeja sobre papel aluminio, ponemos 1/2 kilo de tomates en la rama, junto con una cabeza de ajo entera, cortada por la mitad, (ponemos el ajo boca abajo para evitar que se queme). Agregamos sal y pimienta al gusto y un chorrito de aceite de oliva. Llevamos al horno por 30-35 minutos o hasta que los tomates estén suaves.
Transferimos a una olla grande, agregando 1200 ml de caldo de verduras y dejamos cocinar por 25 min. Pasado el tiempo licuamos y volvemos a cocinar por otros 20 min.

This week I’ve been eating it twice. It is so good, comforting, easy to make, and always an excellent option to have in the fridge. Here’s how we do ours:

Preheat the oven to 200°C.

Place 1/2 kilo tomatoes on the vine, and add one whole garlic bulb, cut in half, (Place garlic face down in dish to avoid scorching.), on a baking tray lined with aluminum foil. Sprinkle some salt and pepper and drizzle some olive oil. Roast in the oven for 30-35 mins or till the tomatoes are soft.
Transfer to a heavy saucepan, and add 1200 ml of vegetable stock and let it cook for 25 min. Blend and cook again for another 20 min.
