A rich breakfast is eggs, crispy asparagus, and cracklings.
🥚 5 stems asparagus, cut
🥚 2 eggs
🥚 2 tbsp cracklings
🥚 Salt and pepper to taste
🥚 Cheese of choice
1. Sauté asparagus with olive oil and add salt and pepper.
2. Break 2 eggs on top of the asparagus and carefully break and spread the yolk.
3. Add oregano and cheese and cover with lid on low fire. Let cook.
4. In a separate pan, heat up the cracklings.
5. Pour cracklings on top of the egg. Serve with bread.
